Wolf Blass Platinum Label Cabernet Sauvignon 2000

The 2000 Wolf Blass Platinum Cabernet Sauvignon is sourced from one of Australia's greatest regions, the Clare Valley in South Australia. The 2000 Vintage produced yields of less then two tonnes per acre of incredibly concentrated Cabernet Sauvignon from a single vineyard in the heart of Clare Valley. The Fruit from three blocks within this vineyard was crushed and fermented seprareted in traditional concrete open fermenters and left on skins for up to 14 days to archieve maximum extraction of colour and fruits flavours and to contribute velvety, well integrated tannins. After gentle pressing the wines were transferred to new French Oak barrels for 22 months prior to bottling in February 2002.

The result is a wine with lifted varietal notes of blackcurrant and a hint of mint followed by an intense palate that has extraordinary depth and complexity. A wine that will cellar for a decade.
