TASTING NOTES
Colour
Deep dark red, with flecks of magenta at the meniscus
Aroma
Dark and alluring with notes of blackberries, bramble, roast meats, lavender and coal dust.
Palate
Lovely density and weight, blackberry and plum cascade across the palate with notes of roast meats, pipe smoke and cedar playing a supporting role. A lovely vein of Barossa black pepper and spice runs the length of the palate. Tannins are quite bold and muscular and pull the flavours through to a long finish. Hints of dark bitter chocolate through the finish add complexity and intrigue.
WINEMAKING
The many parcels making up this wine were crushed into and fermented in three, five, seven and 10 tonne open top vessels. Regular pump overs three times daily were performed during the peak of fermentation to extract flavours, colour and tannins. At pressing, the free run and pressings were combined to tank, then racked to barrel for oak maturation where malolactic fermentation occurred. All batches were kept separate and blended just prior to bottling.
